This delicate blend of rich sweet vanilla and fragrant peppermint makes a smooth and refreshing herbal tea.

Vanilla Syrup
- 1 cup sugar
- 1 cup water
- 1 vanilla bean, split lengthwise
- 6 cups boiling water
- 3 teaspoons peppermint loose-leaf tea or 6 peppermint tea bags
- Ice cubes
- Mint leaves for garnish (optional)
To make the vanilla syrup: In a small saucepan, bring the water and sugar to a boil. Add the vanilla bean to a heatproof jar of bottle. Pour in the hot syrup and let stand 8 hours before using. Refrigerate for up to one week.
Add the boiling water to a 6-cup teapot with a mesh basket filled with the loose-leaf tea or 6 tea bags; steep for 6 minutes. Remove the tea and let cool. Transfer the tea to a pitcher and refrigerate until chilled.
Add ⅓ cup of the vanilla syrup to the pitcher and stir until blended. Stir in more syrup to taste. Serve in glasses over ice, garnished with mint leaves, if you wish.
