Recipe # 7 from, Chocolate Bliss
You can make the batter for this outstanding cake in 15 minutes and bake it in just half an hour. Your kitchen will be filled with a tantalizing chocolate aroma so intense that you'll almost be able to see it!
1 cup granulated sugar1 cup all-purpose flour
1/3 cup unsweetened cocoa powder
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 large egg
1/2 cup milk
1/4 cup canola oil or light olive oil
1 teaspoon vanilla extract
1/2 cup boiling water
Powdered sugar for dusting
Preheat the oven to 350°F. Butter a 10-inch round cake pan.
In a large bowl, stir the sugar, flour, cocoa powder, baking powder, baking soda, and salt until combined. Add the egg, milk, oil, and vanilla to the flour mixture and beat with a handheld electric mixer on medium speed for 2 minutes. With the mixer on low. beat in the water; the batter will be thin.
Pour the batter into the prepared pan and bake for 30 minutes, or until a skewer inserted in the center of the cake comes out with a few moist crumbs. Let cool in the pan for 10 minutes. Unmold onto a wire rack and let cool completely. Dust with powdered sugar and cut into wedges to serve.

Make It Your Own
To make a decorative pattern on top of the cake, place a stencil or a paper doiley on the cake. Put 1/3 cup powdered sugar in a fine-meshed strainer. Hold the strainer a few inches above the cake and tap the side with your other hand, moving the strainer as needed to dust the entire surface. Carefully remove the stencil or doily by picking up both sides and lifting it straight up.
