Soft and chewy with a delicate fruity flavor, Calissons are a specialty of Aix-en-Provence. Made from ground almonds, candied orange and melon, and sugar, they are formed into an oval, set on a wafer, and topped with a thin layer of icing. A perfect addition to an Easter basket or table.
